Energy Bites

Energy Bites, are such a simple satisfying snack to have on hand for kids and adults and perfect for summer. My nine year old son can make them all on his own. The recipe below is from our friends at Our Shared Table. ** Pro tip double the recipe! **

What’s best about this recipe….No baking! Just mix the ingredients all together, shape them into balls and refrigerate! Easy peasy!
You can freeze if you have some sitting around after a few days..but that’s never the case in our family! They are devoured quickly!
Perfect after school snack and even better for on the go snacks in between activities! A full filling snack that kids love..and mom’s approve.

  • Ingredients:
  • 1 1/2c Peanut butter
  • 1/2 c honey
  • 1 1/2 -2 C old fashioned/quick oats
  • 1/2 c protein powder..vanilla or chocolate
  • 1/4 tsp salt
  • 1/2 c chocolate chips *
  • 1tsp vanilla
  • 1Tbl chia seeds/flax seeds *

Mix all the ingredients in a large bowl with a spatula. If mixture is too wet add more oats. Scoop out into round balls (I use an ice cream scoop).

Lay on a baking sheet lined with parchment paper and refrigerate for 1 hour (or stick in the freezer for 20 min if short on time)!

Keep refrigerated until gone.

*Indicates optional ingredients or feel free to swap chocolate chips with raisins, coconut, m&m’s, nuts, anything of you desire.
We make these with both vanilla and chocolate protein powder, and are delicious either way.
