White Chili Chicken Soup

This is a delicious crowd pleaser. It is a great last-minute meal or make it ahead in your crockpot. Like most soups, it is even better on day two once the seasoning has set. Feel free to double the recipe for larger parties. The current ingredients are perfect for a family of 4. 

2 large cans white meat chicken 
(shred it with a fork) OR if you cook in your crockpot add 2 chicken breast 
2 cans Great Northern Beans
1 can Chicken Broth
1 can Rotel Tomatoes
1 - 8 oz. block Cream Cheese, cubed
1 pkg. McCormick White Chili Mix 

Mix all ingredients together & heat. Add cream cheese once you the lower heat & stir occasionally to melt cream cheese. Sprinkle with any white 
shredded cheese; queso blanco or mozzarella is recommended. Serve with tortilla or Frito chips
